Mussels and Clams in White Wine Garlic Sauce
Feeds 4
1.5 lbs fresh black mussels (scrubbed & de-bearded)
1 can of baby clams, drained
4-6 cloves garlic (to your liking)
Bottle of white cooking wine (about 2 cups)
Extra Virgin Olive Oil (about 1/4 cup)
1-2 tablespoons of capers
Fresh Parsley, chopped
1 box of linguine pasta
Cook pasta al’ dente style prior to starting the sauce. Drain pasta.
Sautee olive oil and minced garlic in skillet. Add entire bottle of white cooking wine, baby clams, and capers. Let simmer on low/med for 5 minutes.
Add mussels and cover. Once mussels are opened (a few minutes), they are done. Remove mussels from sauce and place in covered dish to keep warm.
Depending on how large of a skillet you have, you may need to cook the mussels in two batches.
Add pasta to sauce mixture. Plate pasta and top with mussels. Garnish with fresh parsley.

ReplyDeleterecipes, but also a place to share frustration. I'm having such a hard time finding foods sans soy, it's nice to know others will understand. Also any tips on brands that are safe. i.e bread, etc

ReplyDeletesharing symptoms would be nice. I am also curious if those w/ soy allergy are avoiding soybean oil and soy lecithin? I ordered a cookbook for MSPI and it says in there that these two items are okay since they are fats. I have had some items w/ soybean oil the last two days and DD has been fussier at nighttime.

ReplyDeleteWhat is more frustrating/confusing to me is that I spoke with a LC and she said that his green poo could also be due to oversupply and forceful let-down. So, it very well may be that he isn't even MSPI - - so frustrating. I'm still not taking the chance by putting them back in my diet - I'm hoping that next Tuesday's appt with the pedi GI specialist will give me more answers than I've been getting.
I hate the confusion between imbalance and milk allergy. it seems there isn't much way to tell the difference!
ReplyDeleteI'm not chancing the oil or lecithin. lecithin was on the no-no list the pedi gave me Monday. I'll try adding it back in once we are clear and DD is back to normal.
We are a couple of weeks into being dairy free - would love to hear how other's handle eating out.
ReplyDeleteI would like to see what others daily diet looks like -what everyone is eating for breakfast, lunch, dinner, and snacks. I also would like to see info on eating out. Is there anything at fast food restaurants we can eat?
ReplyDeleteI also think maybe a "vent" post every so often would be nice. Everyone can share their frustations and maybe others on here can help. Maybe every Friday or something.
ReplyDeleteIf you click on the "go dairy free" to the right - it has restaurants (at least fast food) listed on there of foods that are dairy-free and which foods have hidden dairy that you wouldn't think! Hope that helps!
ReplyDeleteThe Mommy - the only processed breads I can find are Bran For Life Bread and Fruit Juice bread - both are by Food for Life. The Bran bread will make you pooh like crazy, so I wouldn't eat more than 2 pieces a day. It is great for sandwiches and toast. The rice bread I use in my meatloafs and for PBandJ. It is too thick to eat two pieces at once in a sandwich.
ReplyDeleteI've been soy-free for over a year - am soy-intolerant in general. If you need any brands for anything just let me know.
Southern Stems - I avoid soy because I have an intolerance and even soy-lecithin and soybean oil bother me (give me diarrhea). I would avoid them also for your baby. It makes eating processed foods terribly difficult. You also basically can't eat at restaurants since they grill everything with soybean oil and use margarine instead of butter.
