Mussels and Clams in White Wine Garlic Sauce
Feeds 4
1.5 lbs fresh black mussels (scrubbed & de-bearded)
1 can of baby clams, drained
4-6 cloves garlic (to your liking)
Bottle of white cooking wine (about 2 cups)
Extra Virgin Olive Oil (about 1/4 cup)
1-2 tablespoons of capers
Fresh Parsley, chopped
1 box of linguine pasta
Cook pasta al’ dente style prior to starting the sauce. Drain pasta.
Sautee olive oil and minced garlic in skillet. Add entire bottle of white cooking wine, baby clams, and capers. Let simmer on low/med for 5 minutes.
Add mussels and cover. Once mussels are opened (a few minutes), they are done. Remove mussels from sauce and place in covered dish to keep warm.
Depending on how large of a skillet you have, you may need to cook the mussels in two batches.
Add pasta to sauce mixture. Plate pasta and top with mussels. Garnish with fresh parsley.
